Avocado Quinoa and Grilled Collard Green Sandwich
Improve your overall health with this meatless sandwich. This is a sandwich that features a quinoa burger with sauteed collard greens and avocado slices. When garnished with a hearty tomato slice and crisp pickles it is healthy and satisfying.

  1. Heat 2 tbsp olive oil in a small to medium saucepan over medium-high heat. Once the oil is heated add the minced garlic and onions and cook for 2 minutes. Lower the heat to medium and add the collard greens and cook for 10 minutes. When collard greens are tender set aside in a bowl.
  2. Wipe the pan clean with a napkin and add 1 tbsp of olive oil into the pan. Once the oil is heated at the quinoa burger to the oil and cook for 4 minutes, turn the burger over and cook for another 4 minutes.
  3. Grab to slice of 7 grain bread and add your favorite condiments. (I recommend a chipotle mayo for a southwest zing) Stack with pickles, avocado, tomato, followed by the quinoa burger. Gently top the quinoa burger with the sauteed collard greens and finish by placing the final slice of bread.
